
if you have took a trip to your local market or shopped in the organic section in your supermarket you will find that the carrots come with there feathery leaf tops still on, many people cut them off and throw them away which is a major waste, the leaves have many health benefits, they have been known to lower cholesterol, purifies blood and is great for your immune system, you can shove them in a salad or use as a garnish but why not take it to the next level and whip up a carrot leaf pesto.

Ingredients
bunch of carrot leaves
1 clove garlic
5g nuts
1 tbsp parmesan
2 tbsp oil
1/2 lemon juiced
herbs (optional)
how to make
although not essential you can soften the leaves in a pan first, but you can just add chop them up and add them to a food processor.
you then want to add the garlic, oil, nuts and parmesan aswell as the lemon juice.
season with salt and pepper, you can add herbs if you want to, you can go traditional with basil or other herbs and spices, i like to add a bit of ginger.
once you have all you ingredients together blitz it and jar it up, and your pesto is ready use whether you shove it in a pasta or to fancy a sandwich up.
